Ingredients
8 oz rice noodles
1 tbsp fresh ginger, minced
2 tbsp Erry’thang Sauce (Garlic Basil or Spicy Ginger recommended)
1 tbsp oil (sesame or avocado)
1 cup bell peppers, sliced
1 cup carrots, julienned
1 cup snap peas or broccoli
2 green onions, chopped
1 tbsp soy sauce (or coconut aminos)
1 tbsp rice vinegar
1 tsp sesame seeds (optional)
1/4 cup chopped cilantro (optional)
Optional protein: tofu, shrimp, or chicken
Instructions
1. Cook the noodles: Boil rice noodles according to package instructions, then drain and rinse under cold water to prevent sticking.
2. Sauté the aromatics: Heat oil in a pan over medium heat, then add ginger and sauté for 30 seconds until fragrant.
3. Cook the veggies: Toss in bell peppers, carrots, and snap peas. Stir-fry for 3-4 minutes until slightly tender but still crisp.
4. Add the sauce: Stir in Erry’thang Sauce, soy sauce, and rice vinegar. Let everything cook for another minute, letting the ingredients soak in all the goodness.
5. Mix it up: Add the cooked rice noodles and toss everything together until well coated.
6. Top & serve: Garnish with green onions, sesame seeds, and cilantro. Serve hot and enjoy!
